Braided bread with mushrooms and chicken

Very practical to take them in your lunch box, but they are very special also as starters.

Ingredients for the dough:
  • 480ml water
  • 900g all purpose flour
  • 80g fresh yeast
  • 2 teaspoons salt
  • 4 tablespoons olive oil

Ingredients for filling:
  • 500g mushrooms (diced)
  • 1 big boiled chicken breast (~250g, diced)
  • 3 red bell peppers (diced)
  • 2 eggs (beaten)+ another 1 or 2 for brushing
  • 1 hand of parsil (chopped)
  • 200g heavy cream
  • 400g of emmental cheese (grated)
  • 1 tablespoon chicken stock
  • pepper
  • salt

  1. Put all the ingredients for dough in the bread machine or in an electric mixer. Let it raise for 1h30.
  2.  Dice the mushrooms, peepers, chicken breast.
  3. Cut the parsley.
  4. Mix all the ingredients for the filling in a big ball.
  5. Split the dough in 12 pieces.
  6. Take one piece, and stretch it with a rolling pin in a rectangular form. Imagine that you'll need to divide this rectangle in 3 parts on the longer side. take a knife and fringe diagonally the 2 parts on the side. The part inside remains uncut.
  7. Put around 3 spoons of the filling in the middle part and braid the fringes from the 2 sides like an ear.
  8. Repeat the same steps for all 12 pieces of dough.
  9. Brush the top with beaten eggs to brown nicely when baked.
  10. Put them in the oven at 180ÂșC for 45 minutes.
