Cocoa sweet bread

I made this recipe because I mistakenly confused it with another one. But before realizing it, I was already halfway, so I continued. The result was above expectations: a super fluffy cake that is melting in your mouth.

Ingredients :
  • 1 1/ 3 cup all purpose flour
  • 1 cup sugar
  • 6 eggs (whites and yolks separated)
  • 1 1/ 3 cup olive oil
  • 1 tablespoon lemon zest
  • the juice of one lemon
  • 1 tablespoon vanilla sugar
  • 1 tablespoon cocoa


  1. Beat the egg whites using a food processor.
  2. Add sugar and vanilla sugar and continue to beat until they becomes a shiny foam.
  3. Remove the bowl from the food processor and add the egg yolks one by one, stirring gently with a spoon from the top to down.
  4. Add oil little by little and mix slowly.
  5. Add lemon juice and lemon zest.
  6. Last, gradually add flour.
  7. Brush a big rectangular pan with oil and dusted with flour.
  8. Pour the mixture into the pan, still keeping 4 tablespoons of the mixture into the bowl.
  9. Add cocoa and stir well until it incorporates.
  10. Pour over the previous mixture.
  11. Preheat the oven to 200ºC and bake in the oven for 10 minutes.
  12. Reduce temperature to 180ºC and let it cook for another 40 minutes.
