Beetroot and feta tart

Last year I had some beetroot seed and I have planted them in my garden. Late autumn, I got some very nice beetroots from them. I have steamed them, hidden them in the freezer and I found them back these days. I thought to use them for a savoury tart and look what I made.


Ingredients:
  • shortcrust pastry (~300g)
  • 500g steamed beetroot
  • 200g feta cheese
  • 4 eggs
  • 200ml milk
  • 1 teaspoon of thym

Directions:
  1. Stretch the pastry crust and put it an a pan.
  2. Dice beetroot.
  3. Smash the feta cheese with a fork and add it over the beetroot.
  4. Mix beetroot  with cheese and lay it in the pan with the pastry sheet.
  5. Beat the eggs, add milk and thim and mix.
  6. Pour composition in the pan over the beetroot.
  7. Put in the preheated oven at 190ºC for 45 min.
The taste was above expectations and for sure I will do it again.
