Spelt bread

A country bread with a special flour.

  • 270ml water
  • 350g flour bread
  • 100g spelt flour
  • 1 teaspoon salt
  • 1 tablespoon of sugar
  • 50g sunflower seeds (kernels)
  • 21g fresh yeast

  1. Put all the ingredients in a bread machine, program dough (mine is 1h30)
  2. Take it out and form a ball, adding flour to avoid sticking to your hands.
  3. Put the dough in a Dutch oven pot (floured before) and let it raise for 30 min at 50ºC. Under the pot, place a little bowl with water to avoid drying the bread too much.
  4. Cover the pot with its lid, increase the temperature to 200ºC and cook it for 45min. I removed the lid in the last 15 minutes to brown it more.

Dora, thanks for pointing out that I forgot to mention such an important ingredient. This bread is based on yeast. I'll correct the recipe.
