Cherry compote clafoutis

A very quick cake and extremely tasty.



Ingredients:
  • 350g cherries from compote (well drained)
  • 2 eggs
  • 40g sugar
  • 55g all purpose flour
  • 170g sour cream
  • 100ml milk
  • 1 tablespoon of lemon zest
  • 1 tablespoon of cornflour
  • 1 tablespoon rhum essence
For the skillet:
  •  2 tablespoons of sugar
  • 1 tablespoon of butter

Directions:
  1. Beat the eggs with sugar, flour and cornflour.
  2. Add the lemon zest, milk, cream and rhum essence and stir well.
  3. Butter the skillet and sprinkle the 2 tablespoons of sugar.
  4. Pour the composition in the skillet and add the cherries.
  5. Put it in the preheated oven at 200ºC for 45 min.

Oh yum, this is almost too simple! I reckon I could do this for my next dinner party as an easy entree. :)
