Almond and banana cupcakes

Fluffy, soft and extremely flavored. In the morning, both me and my daughter are running to take the first cupcake.

Ingredients muffin:
  • 250g all purpose flour
  • 75g sugar
  • 150g smashed almonds
  • 1 tablespoon vanilla sugar
  • 1/4 teaspoon sodium bicarbonate
  • 1/4 teaspoon salt
  • 2 eggs
  • 110g soft butter
  • 3 smashed bananas

Ingredients frosting:
  • 250g mascarpone cheese
  • 50g soft butter
  •  1/4 cup of sugar
  • 1 tablespoon of cream cheese
  • 1 teaspoon almond extract
  • yellow food coloring

Directions for muffins:
  1. Mix all ingredients using an electric mixer. If you do not have one, mix dried and wet ingredients separately then add the wet ones in the dried ones and mix.
  2. Preheat the oven at 180ºC.
  3. Pour the composition in muffin pans.
  4. Put them in the oven for 25 min.

Directions for frosting:
  1. Mix well all ingredients with an electric mixer.
Decorate the muffins with the frosting using a pastry bag and add one almond on top of each cupcake.
