Avocado lemon popsicles


Ice cream? YES, ice cream again! Avocado, lemons, chocolate and pistachios? How does this sound?
Simple, blend and freeze. Melt and coat. Then taste .... mmmmm....

Ingredients:
  • 2.5 lemons
  • 2 avocados
  • 50g agave nectar (or other sweetener)
  • 200ml water
  • 100ml chocolate (melted)
  • 100g pistachios (cut in pieces)

Directions:
  1. Squeeze lemons.
  2. Blend the lemon juice with avocados, water and agave nectar
  3. Pour in ice cream molds and freeze for at least 6 hours.
  4. Melt the chocolate in bain-marie.
  5. Take out the ice cream molds and put them under warm water to be removed easily.
  6. Take a spoon and drop lines of melted chocolate over the popsicles.
  7. Immediately, sprinkle pistachios over the chocolate.
