Emerald doll cake



Happy birthday, my sweet baby! Today you make 18 months and your mother prepared a special cake for you.



Ingredients dough:
  • 8 eggs
  • 5 tablespoons sugar
  • 8 tablespoons all-purpose flour
  • 1 tablespoon rum essence 

Ingredients icing:
  • 600g cream cheese (Philadelphia)
  • 3/4 cup sugar
  • 1 tablespoon rum essence 
  • 500ml whipping cream (heavy, 40% fat) - cold


Ingredients decoration:
  • 500g marzipan for the dress + 50g marzipan for decorations (flowers, ribbon)
  • food coloring gel (green and yellow)

Directions for dough:
  1. Beat the egg whites together with sugar. 
  2. Beat the yolks with a fork and add the rum essence.
  3. Pout the yolks in the egg whites stirring slowly with up and down movements.
  4. Add slowly flour and continue to stir.
  5. Use a semi sphere cake pan. Oil it and cover it with flour inside.
  6. Pour the mixture in the pan.
  7. Preheat the oven at 180ÂșC and bake it for 1 hour.
  8. Take the dough out of the oven, let it cool a bit and remove gently the cake pan.
  9. Let the dough cool and cut it in slices. Preferably to let it dry a bit over nigh and to slice it the next day because it very soft.


Directions for icing:
  1. Soften the cream cheese with a standing mixer.
  2. Add sugar and rum essence and continue to mix until disolved
  3. Add whipping cream and mix with medium speed until it become creamy and is forming peaks.Do not overmix.

Decoration:
  1. Color 500g of marzipan with a little food coloring (green) and knead until the color is well distributed.
  2. Roll the green marzipan in a sheet of 3mm with a round shape.
  3. The remaining marzipan color it yellow and make flowers, leaves, ribbons etc.

    Assembling:
    1. Put 2/3 of the icing between slices of dough and stack them on on top of the other.
    2. With the remaining icing cover the exterior of the cake.
    3. Level it well and add on top the green matzipan skirt.
    4. Add all decorations including the doll.
    And our emerald princes is ready !
