Mushroom soup

Although I prefer transparent soups in which you could see the ingredients, I don't refuse  a creamy delicious soup.

  • 1kg mushrooms (diced)
  • 2 little onions (diced)
  • 3-4 green parsley branches
  • 80g butter
  • 3l chicken soup(if not natural, then use water + 3 tablespoons chicken stock)
  • 150g rice
  • 1/2 teaspoon nutmeg
  • salt
  • pepper
Garnish (optional):
  •  sour cream
  • 4 tablespoons oil + 150g sliced mushrooms from the kilo mentioned above.

  1. (optional) Keep 150g de mushrooms for garnishing and fry them in oil with salt and pepper.
  2. In a pot, brown the remaining mushrooms, onions and parsley in the butter.
  3. Put salt and pepper.
  4. Add the soup, rice and nutmeg.
  5. Wait to simmer, cover and let it boil for 30 min.
  6. Let it cool, pour and mix the soup in blender.
Serve with sour cream.
