Chicken skewers and couscous with dried fruits

What about some couscous for today?

 Ingredients for chicken skewers:
  • 2 chicken breasts
  • 2 tablespoons of olive oil
  • 2 bulbs of garlic (grated)
  • 1 teaspoon paprika (sweet)
  • 1 teaspoon tumeric
  • juice from one lemon
Ingredients for couscous:
  • 4 tablespoons of olive oil
  • 1 onion fine chopped
  • 2 bulbs of garlic (grated)
  • 8 dried apricots (diced)
  • 1 hand of raisins
  • 50g sliced almonds
  • 200g couscous
  • 1 teaspoon of chicken stock / one cube
  • 600g water
Preparation of the chicken skewer:
  1. Prepare a sauce from oil, garlic, paprika, tumeric and lemon juice.
  2. Cut the chicken in big cubes, suitable for the skewers and mix it with the sauce prepared earlier. I can leave it in the refrigerator to take the taste, but if there is not enough time for this it works right away as well.
  3. Shove the chicken cubes into the skewers.
  4. Heat a grill pan with and put the skewers to cook.
Preparation of the couscous:
  1. Heat the oil in a pan and put in order onion, garlic, almonds, apricots and raisins. Mix them and let them cook for few minutes. 
  2. In a pot make a soup with water and chicken stock and put it to simmer.
  3. Move the pot off the hot burner and add the couscous to absorb the water for 5-10 minutes.
Put in the plate first the couscous, then add in the dried fruits in the middle and the skewers o a side.

It is very nourishing food with a delicious taste with oriental influences.
