Whole Spelt Bread

This is a diferent type of bread but very healthy.

  • 500g spelt flour
  • 300ml water
  • 42g fresh yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 tablespoon lemon juice

  1. Mix all ingredients with a standing mixer and let it rise for 2 hours.
  2. Transfer the dough into a dutch oven pot over a baking sheet layed on the bottom.
  3. Let it rise for another 1 hour.
  4. Score the dough with a sharp knife.
  5. Put it in the oven at 200ÂșC for 45 minutes covering the pot with its lid.
  6. Remove the lid and let it brown for another 15 minutes.
