Pasca

Pasca is a traditional cake for Easter. But I did it for Christmas!


The dough is the same as for the Cozonac. You can find it here.

Ingredients for the filling:
  • 500g cottage cheese
  • 2 tablespoons vanilla sugar
  • 2 teaspoons rum essence
  • 1 tablespoon lemon zest
  • 2 tablespoons semolina
  • 2 tablespoons all-purpose flour
  • 2 eggs
  • 100g raisins
  • 4 tablespoons sugar
Preparation of the filling:
  1. Add all the ingredients and mix them well
Directions to assembly the cake:
  1. Take out the dough from the bread machine and split it in 2: one stretch it to fit the bottom of the pan and the second one split it again in 2 and form 2 rolls to be twisted.
  2. Put the stretch dough on the bottom of the pan and put the twisted dough near the walls of the pan.
  3. Put it in the oven for 60 min at 50ºC to raise.
  4. Take it out and put the filling in the middle of the cake, having the twisted dough as walls.
  5. [optionally] Beat an egg and brush the remaining dough of the cake with it.
  6. Put it in the oven at 150ºC for 50 min.
The interior of the cake is lower than the wall but this is normal because the cheese is heavier.
