Ingredients:
- 5 apples - peeled, cored and diced
- 5 tablespoons sugar
- 2 teaspoons ground cinnamon
- 3 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 4 eggs
- 1 cup olive oil
- 2 tablespoons vanilla extract
- 2/3 cup fresh orange juice
Directions:
- Grese the bundt cake pan with butter.
- Mix diced apples with sugar (the 5 tablespoons) and cinnamon
- In the bowl of a standing mixer, put the eggs and the cup of sugar and mix.
- Add oil, vanilla extract and orange juice and mix.
- Add flour and baking powder and mix just until well incorporated.
- Layer the mixture and the apples in the bundcake pan.
- Bake for 100 minutes at 180ºC. I have used a Nordicware pan that is heavy and thick so I needed more time to bake it properly. For a silicon bundcake maybe 70 minutes is enough.
