Apple bundt cake

There has been a long time since I cooked my bund cake. So it was the time for a new one, and of course with apples...


Ingredients:
  • 5 apples - peeled, cored and diced
  • 5 tablespoons sugar
  • 2 teaspoons ground cinnamon
  •  3 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 4 eggs
  • 1 cup olive oil
  • 2 tablespoons vanilla extract
  • 2/3 cup fresh orange juice

Directions:
  1. Grese the  bundt cake pan with butter.
  2.  Mix diced apples with sugar (the 5 tablespoons) and cinnamon
  3. In the bowl of a standing mixer, put the eggs and the cup of sugar and mix.
  4. Add oil, vanilla extract and orange juice and mix.
  5. Add flour and baking powder and mix just until well incorporated.
  6. Layer the mixture and the apples in the bundcake pan.
  7. Bake for 100 minutes at 180ºC. I have used a Nordicware pan that is heavy and thick so I needed more time to bake it properly. For a silicon bundcake maybe 70 minutes is enough.

Sweet, another way to get rid of the apples I get every other week from bountiful baskets. A few weeks ago, I tried a similar recipe for Apple cake http://bit.ly/1tbyuQ1. Will definitely be trying this one next(:
