Black sesame sourdough bread

I have developed lately a passion for black sesame. I add it in salads, in yogurt, in honey and why not in bread?
I love its pronounced taste so let's give it a try in a sandwich white bread.


Ingredients:
  • 750g water (room temperature)
  • 250g liquid sourdough (100% hydration)
  • 550g manitoba flower
  • 550g white wheat bread flour
  • 15g salt
  • 43g black sessame

Directions:
  1. 9:45 Mix all ingredients with a standing mixer. 
  2. 10:00 Cover the bowl with a lid and let it stand at room temperature for the first fermentation. 
  3. 13:00 Take the dough out of the bowl and shape it in 2 oblong loaves. 
  4. 13:15 Put the loaves in floured baking pans and let them raise for the 2nd fermentation, covered with a towel to avoid drying at the surface.
  5. 17:30 Bake in the preheated (wood fire) oven at 230ÂșC for 25 minutes. 
  6. 17:55 Take the breads out of the oven and let them cool on a wire rack.
