Pear and chocolate muffins

My daughter loves chocolate and I try to vary the versions of muffins that she eats in the morning. This one uses chocolate chips and in combination with diced pears they are just perfect!


Ingredients: (for 15 muffins)
  • 2 eggs
  • 100g butter (at room temperature)
  • 250g all purpose flour
  • 1 teaspoon baking soda
  • 1 pinch of salt
  • 4 half pears from compote (diced)
  • 2 tablespoons from compote sirup
  • 100g chocolate chips
  • 1 tablespoon honey
  • 6g yeast
  • 1 teaspoon vanilla extract

Directions:
  1. In the mixer bowl, add flour, yeast, baking soda, eggs, honey, vanilla extract and butter and mix for 1-2 minutes.
  2. Add sirup, pears and chocolate chips and mix just a bit, slowly.
  3. Pour the composition in muffin mold, by filling them only 2/3.
  4. Bake in the preheated oven for 30 minutes.
These muffins will raise in the oven and they won't go down when cooled.
