Traditional flan

A simple and classical recipe for a flan. It is very soft and has an incredible vanilla aroma.


  • 400g shortcrust pastry
  • 90g maizena (corn starch)
  • 1 vanilla bean
  • 4 eggs
  • 1l milk
  • 150g sugar

  1. Bring the milk with the vanilla bean to boil. Remove the vanilla bean.
  2. In a bowl mix the sugar with maizena.
  3. In a pan, beat the eggs and add the sugar with maizena.
  4. Pour the milk into the egg composition by stirring continuously.
  5. Heat this composition, continuing to mix for 2 minutes.
  6. Lay the shortcrust pastry on a tart pan.
  7. Put the vanilla composition into the pan.
  8. Bake at 180ºC for 40 minutes.
