Mushroom quiche

Sometimes I am starting with an interesting recipe but I replace one or two ingredients and I continue with replacements until I march what I found in my cupboard. In this way I arrive to make my own recipes. Sometimes they are not extraordinary but sometimes the result is a real success. This is what happened with this recipe and it turned out to be extremely delicious.


  • 200g grated emmental cheese
  • 250g diced mushrooms
  • 1 diced red bellpepper
  •  3 eggs
  • 180ml milk
  • 1 teaspoon nutmeg
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 400g pate brisee

  1. Stretch the shortcrust on the bottom of the pan.
  2. In a bowl beat the eggs, add milk, nutmeg, pepper and salt.
  3. In another bowl mix the cheese, mushrooms and bellpepper. Add them in the tart pan.
  4. Pour the egg mixture over them.
  5. Decorate if you like and brush with (an extra) egg on top.
  6. Bake at 180ÂșC for an hour.
