Cocoa pancakes


Again my pot with sourdough to throw away was full! And as always, I hate wasting flour. What best recipe for this purpose than pancakes? And not ordinary pancakes, but cocoa pancakes. Enjoy ...



Ingredients:
  • 810ml milk
  • 10 eggs
  • 180g butter (melted)
  • 200g all purpose flour
  • 80g cocoa powder
  • 50g sugar
  • a pinch of salt
  • 400g sourdough

Directions:
  1. Mix the eggs
  2. Add the sourdough and mix.
  3. Add slowly flour, cocoa, salt and sugar. Mix until well combined.
  4. Add the melted butter and mix again,
  5. Let the composition to rest for an hour.
  6. Heat the pancake pan. I use 2 so I reduce the time of cooking.
  7. Put some drops of olive oil on the heated pan.
  8. Pour a ladle of the composition and spread it well in the pan. You can use special pancake shapes to create nice forms live flowers, hearts etc.
  9. Return the pancake after 1-2 minutes and let it cook on the other side for 1 minute.
