Sourdough pancakes

Since I am keeping my sourdough at room temperature I need to feed it twice a day. I remain with some quantities of discarded sourdough that I keep in the fridge in a closed pot. I do not like to through away flour so the discarded sourdough I use it in many recipes. I feed my sourdough in 1:2:2 proportions (sourdough:water:flour), more exactly 15g of sourdough + 30g of water + 30g of flour. This means that I remain with 60g of discarded sourdough at every feed. I use both white flour and whole wheat flour and the type of flour doesn't really matter if this discarded part arrives in a pancake composition.

This recipe uses exclusively the flour in the sourdough and no extra one is added. My sourdough is kept at 100% hydration, meaning that half is flour and half is water. It took me a while to perfect this recipe and I am happy that I finally found a good formula. The pancakes should not be cooked too much otherwise become crispy. If this is your style feel free to brown them well, but I prefer them soft, so I can roll them with a spoon of chocolate or jam. This means that immediately they turn brownish I turn them on the other side or remove them from the pan.

These are flat pancakes in the French style not on the American style. The difference is that the American ones are more thick and small, while the French ones are flat, thin and larger.

I give here the basic ingredients for 100g of sourdough. From this basic recipe you get about 3 pancakes of 22 cm. If you have more sourdough, just multiply the ingredients. What I like is that as soon as I have some left over sourdough I bake few pancakes to have them fresh in the morning. For this particular photo, I baked a huge quantity of pancakes from 1500g of sourdough that I gathered for 2 weeks in the fridge.

Mickey's pancakes

Cherry jam or raspberry jam? This is my dilemma for these pancakes. Because the pancakes will be eaten for sure.

In fact, it is the first time I made pancakes and they were gone in one shot. None of them was left for later ...
... and with this I doubt they need more presentation ...

Pancakes with sour cherry jam

A pancake recipe in which to throw away your extra sourdough. No sourdough available? Replace it then with 150g of water and 150g of all purpose flour.

Sour dough, sour cherry but in fact this recipe is a sweet one. Oh these sour cherries, how much I was ignoring them when I was in Romania because they were more sour than the normal cherries and how much I miss them here in Belgium where they are not so much known. However, I find them sometimes in July in the Saturday fruit market in my village. I remember once, I bough a sour cherry crate (~6kg) and the seller wanted to be sure that I knew what I was buying. He told me that they are cheaper because they are sour and they are not to be eaten like that.He continued explaining me that they were dedicated to jams and compotes. The truth is that me and my husband we just love them fresh. The jam I had for these pancakes is from my mother in law otherwise I would not dare to destroy the freshness of sour cherries.

Cocoa pancakes

Again my pot with sourdough to throw away was full! And as always, I hate wasting flour. What best recipe for this purpose than pancakes? And not ordinary pancakes, but cocoa pancakes. Enjoy ...

Pancake cake

If you cannot decide what you love the most: the pancakes or chocolate cake than here I have a combination of both. Yes, a delicious pancake cake very easy to make. It is a very fine one and looks so fancy even if you start from trivial pancakes.

Sourdough pancakes

The experiment to raise my own sourdough is ongoing. My first trial failed but in the second I have great hopes. The excess of the sourdough remaining form the feedings and considered "to be thrown away" I kept it in the fridge to use it for other recipes. Simply I cannot stand the idea of throwing it away. So, here is a recipe of pancakes with sourdough (not mature enough yet). The sourdough play here a role in taste so it doesn't show the raising properties.
The pancakes are very thin, without big holes (I like this because I hate seeing the filling going out through them) and they are very delicious !

Pancakes with coco milk

Because I had some left over coco milk  from the white chocolate cake, I was thinking of make an exotic pancake recipe. Even before finishing them, I have received some comments from the people walking on my street that sounds like "Mmm it smell so good, somebody makes pancakes !"
