Pea soup

Although I repeat quite often the same soup recipe I make, sometimes I like to test something new. This pea soup was an alternative to my regular Traditional chicken soup.
Easy to do and with a particular taste given by the peas, it is for sure a good treat or aperitive.
Being of color green I was wondering if my kids would like it. It looked like the color was not a problem for them and despite my initial doubts the taste was well appreciated.
This is a healthy soup. If you are vegetarian, skip the bacon that, in my opinion gives the sparkle of this dish.

Ingredients:
  • 1.5kg frozen peas 
  • 250g diced celery root
  • 2 hands of chopped leek (green leaves)
  • 1 big onion (diced)
  • 1 green bell pepper (diced)
  • 3l water
  • 1 tablespoon of vegetable stock
  • 1 teaspoon salt
  • 2 teaspoons of green aromatic herbs (green celery leaves, dill, lovage)
  • 2 tablespoons olive oil

Directions:
  1. Heat the olive oil in a big soup pot (~5 or 6 liters)
  2. Add the onions and let them fry until they soften (~5-10 minutes). Stir them from time to time.
  3. Add the bell peppers, leek, celery roots, vegetable stock and salt and stir.
  4. Add the peas and the water and let everything boil for 30 minutes.
  5. At the end, add the chopped aromatic herbs and continue to boil for 10 minutes more.
  6. Using a hand blender puree the entire soup.
  7. Serve with sour cheese and bacon.
