Apple roses

Making these apple roses was challenging but doing them was a lot of fun. I couldn't estimate exactly in the beginning how many would result from 500g of puff pastry, so I ended up doing a lot, more exactly about 40 pieces.
The not funny part was doing the puff pastry. It took a day to make the pastry so the roses were scheduled for the next day.
I've learnt a lot with this recipe. One of the thing was that, doing everything by yourself is very time consuming. Next time I would probably buy the puff pastry and do only half of the recipe.
Doing the roses was challenging and amazing in the same time. Finding the best position to place the apple slices on the dough strips followed a learning curve. In the end, I was happy with the result and the most difficult was to eat them without feeling sad to destroy a beautiful flower design.
However, it was an experience that I recommend to all as it brings a lot of satisfaction in the end, both visually and tasty.

Ingredients: (for 40 pieces)
  • 500g puff pastry
  • 15 medium apples
  • 1/4 cup of concentrated syrup. I used pine syrup, but any diluted jam (with a bit of water) can work as well.
  • Juice of 1-2 lemons

Directions:
  1. Remove the core of each apple and slice them horizontally. You can slice them with a knife, but for a uniform and rapid way I recommend using a mandoline.
  2. Place the slices in a ceramic bowl and pour the juice of lemon.
  3. Microwave the slices of apples for 1, maximum 2 minutes to soften them.
  4. Divide the puff pastry in 5 and work on each part, one after another, while keeping the rest in the fridge.
  5. Stretch the puff pastry on the flowered bord in a very thin layer. Give it a oval or rectangular shape. Then, with the used of a knife, cut the stretch dough in 8 stripes, about 3-5cm wide.
  6. Brush the first stripes with a bit of syrup.
  7. Place the slices of apples on half of the stripe by letting half of each slice slice out. Overlap the slices until you finish the stripe.
  8. Fold the other half of the stripe over the apple slices and roll from the finishing part to obtain a rose.
  9. Place the apple rose on a muffin case, preferably a silicone one.
  10. Repeat the process for the remaining stripes.
  11. Bake the apples at 200ÂșC for 15 minutes covered with aluminium foil, and another 10 minutes without the foil.
