Chocolate biscuits

When your child asks you for chocolate biscuits, you leave your chores aside and you start doing them.
While from my big daughter I was expecting her to get involved in the preparation process, well.... I was not expecting that my son of 2,5 years old to be that excited too. After this experience, I feel like opening a new era of cooking with my kids, and more biscuits recipes will most probably come :)).
For this simple recipe I spend almost a haft of a day with my kids. It is not a complicated one, but it takes time. As this is a lovely time spent together with my kids I do not bother if it takes longer. Making the chocolate shapes was probably the most time consuming as I had a silicone candy sheet with only 8 shapes. That ment to fill in the shape, put it in the fridge for 15 minutes, take out the chocolate shapes and redo the proces for 4 times. Of course it can be kept simply by simply spooning the chocolate on the top of the biscuits and this will reduce the time considerably.
For the other part with making the dough and cutting the biscuits.... well here it was the fun for the kids. Even my son, couldn't resist to cut by himself with all the biscuit cutter shapes.
As for me, I was expecting to offer these biscuits as a snack to my children when they go to school. My hopes were in fact too high as one of the tray was gone after just tasting :)

Ingredients:
  • 400g all-purpose flour
  • 200g unsalted butter (at room temperature)
  • 100g powdered sugar
  • 1 egg
  • 200g milk chocolate (or any time at your preference)
  • 1 tablespoon vanilla sugar
  • 1 tablespoon vanilla essence
  • a pinch of salt

Directions:
  1. Melt the chocolate in bain-marie and create different shapes of chocolate. I used silicone sheets made for candies and they worked perfectly well for chocolate as well as they were very flat, at the size of a big coin. To speed up, put the filled silicone sheets in the fridge for 10-15 minutes for the chocolate to harden. Then save them for a later stage of the recipe. Also leave a bit of chocolate unused to stick later the chocolate shapes on the top of the biscuits.
  2. Using a standing mixer, mix the butter with sugar.
  3. Continue to mix and add the egg, vanilla sugar, vanilla essence and the salt.
  4. With a spoon add the entire quantity of flower. 
  5. When all ingredients are combined, wrap the dough with a plastic film and store it in the fridge for one hour. This is needed for hardening the dough.
  6. Take the dough out of the fridge and stretch it with a rolling pin. It should be at a thickness of 3 to 5 mm.
  7. Cut the dough with biscuits cutters. Use some shapes that match the chocolate shapes.
  8. Put the biscuits on 2 trays lined with silicone sheets or simple baking sheets.
  9. Cook the biscuits around 20 minutes at 200ºC until they start to brown from the sides. The timing may be increased if the oven does not cook uniformly the 2 trays, and you might need to keep the second tray few minutes more to get the biscuits properly cooked.
  10. Once the biscuits are baked, get them out of the oven and let them cool on the tray completely.
  11. Now it is the time to combine the 2 parts: take the biscuit, add a bit of the melted chocolate (that you may need to rewarm a bit) and add the chocolate shape on top with a soft press.
  12. Now they are ready to serve. Be careful, once you taste one, it will be difficult to resist to a next one.
