Black and white chocolate cake

Every year on the 7th of January we celebrate in Romania Saint John. By a nice coincidence, both my mother and my mother in law are named with a feminine version of the name John. Of course, with such a rare thing, we couldn't miss to add this name also to our daughter. And this doesn't stop here, because my grand father was called Ion as well. As you can see, Saint John in our family is definitely a very important holiday and we celebrate this day, every year, in all directions!
For this occasion, in the few time I had,  I made a quick cake by combining the dark chocolate dough with a white chocolate filling. I did not add sugar as the white chocolate I had was very sweet.
The cake was so good that it disappeared very quickly in our stomach :)

Ingredients:

Dough:
  • 6 eggs
  • 6 tablespoons powder sugar
  • 3 tablespoons olive oil
  • 6 tablespoons all purpose flour
  • 2 tablespoons cocoa powder
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking powder

Filling:
  • 600g white chocolate
  • 500g whipping cream
  • 50g butter

Sirup:
  • 150g water
  • 1 tablespoon vanilla extract

 Directions:
  1. Beat the egg whites until foamy using an electric mixer. Add the sugar and vanilla sugar a little at a time.
  2. In a separate bowl, mix the egg yolks with the 2 tablespoons of oil
  3. Pour the egg yolks in the white eggs and mix slowly with up-down movements
  4.  Add the flour, cocoa, vanilla extract and the baking powder
  5.  Pour the resulting composition in a cake pane oiled with butter and dusted with flour.
  6.  Preheat the oven and put the dough inside the oven around 40min at 180°C. Try the dough with a stick to see if it gets out clean, and if yes, then it's done.
  7. Let it cool over night or at least couple of hours.
  8. Cut the dough in 3 slices.
  9.  Melt the chocolate with butter in bain-marie and let it cool a little.
  10. Beat the whipping cream.
  11. Add the chocolate into the whipping cream and mix gently.
  12. Layer the first slice of the cake and add 1/3 of the sirup.
  13. Layer the filling over the slice.
  14. Continue to add another slice + 1/3 sirup +1/ 3 filling, and the same for the last slice
  15. Grate some black chocolate on top or decorate it as you wish.
