Apple clafoutis

It is definitely the apple season and I cannot resist to bake something with them. This clafoutis has a reach taste, it is very flavored and remembers me of creme brulee.


Ingredients:
  • 1 kg apples
  • 3 teaspoons cinnamon (powder)
  • 4 eggs
  • 100ml milk
  • 250g (whipping) cream
  • 20g corn starch
  • 50g sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon vanilla sugar
  • 20g butter
  • 50g brown sugar

Directions:
  1. Butter a pan and sprinkle the brown sugar over.
  2. Remove the apple core of the apples. If you prefer to peel them do so, I didn't because it takes too much time.
  3. Slice the apples and lay them in the pan. Sprinkle cinnamon between the apple layers.
  4. In a bowl beat the eggs, add the milk, the cream, the corn starch, sugars and vanilla extract and stir well.
  5. Pour the mixture over the apples in the pan. Optionally you can sprinkle some extra sugar on top of the apple to caramelize nicely.
  6. Cover the pan with a lid or an aluminum foil and put the pan in the oven at 220ºC for about 1 hour. If your pan is large and you have less layers of apples it can take less time.
  7. Turn off the heat, remove the lid and let the pan inside the oven for another 15-20 minutes to brown the apples on top.
