Pavlova

This is the cake for the 1st of June for my sweet baby Irina. Sweet, fresh, light and vibrant as you are.
The name of this cake comes from the Russian ballerina Anna Pavlova. The origins of these cake are disputed between New Zealand and Australia, countries in which this dessert is very popular.


Ingredients:

For the meringue:
  • 6 egg whites ( kept in a perfectly closed bowl inside the fridge for at least a day and kept at least 3 hours before using them at room temperature)
  • 300g sugar
  • 2 tablespoons cornstarch

+ 500ml whipped cream
+ 500g strawberries (cut in haves)
+ 250g strawberry puree


Directions:

  1. The meringue is made and cooked following instructions in the meringue recipe. But no food colouring is used.
  2. Instead of doing small meringues, do 2 circles with a diameter of 24cm and fill them with meringue using a pastry bag.
  3. Bake the meringue on silicon sheets and let them cool.
  4. Mix the whipped cream separately.
  5. Build the cake doing layers of meringue, half of the strawberries, half of the whipped cream then again, the second meringue, the remaining whip cream and strawberries.
  6. Decorate with strawberry puree.

I did this recipe again with mixed fruits, 7 years later since my original post, still on a similar occasion, my daughter's name day. She is not a baby anymore but she is the same sweet, fresh, light and vibrant girl.
