Pancakes with coco milk

Because I had some left over coco milk  from the white chocolate cake, I was thinking of make an exotic pancake recipe. Even before finishing them, I have received some comments from the people walking on my street that sounds like "Mmm it smell so good, somebody makes pancakes !"

Ingredients:
  • 125g flour
  • 2 eggs
  • 250ml coco milk
  • 200ml milk
  • 1 tablespoon of lemon zest
  • 1 tablespoon of rum
  • 20g softened butter
  • one pinch of salt

Preparation:
  1. Put all the ingredients in an electric mixer. The resulting consistency should look like a light cream.
  2. Let it sit for 30 min.
  3. Heat a pancake pan and put a small piece of butter there to melt before making each pancake.
  4. I used heart silicone shapes, so I had to pour the composition until the shape was filled in a thin layer. If the layer is too thick, the pancake won't arrive to cook on the other side while the side under can become burned.
  5. Turn the pancakes on the other side with a spatula and let them brown just a little.
I have sweeten my mornings with these pancakes filled with fig jam. It was indeed an exotic breakfast.
